2015 CCW Viognier
Horse Heaven Hills AVA
March 8th 2016
Viognier is a varietal know for its flora characteristics and I like the way this one expresses itself from our vineyard. The flora component is mixed with notes of peach and jasmine. The flavor profile is consistent for our site, rich fruit and flowers seem to combine to create a unique flavor profile. About 10% Roussanne was blended into the wine to give it a little more acid and structure. This wine pairs nicely with hearty fish dishes and rich sauces. A well balanced wine that should drink nicely for a few years.
Viognier has been a consistently great performing varietal for Coyote Canyon and I am starting to get a better feel for how to craft this wine. Made in 100% stainless steel the idea is to highlight the fruit aspect of the varietal. I like this wine to be a little heavier on the palet so I do some extended lees contact and stirring to try and build more complexity and mouth feel in the wine. I try to pick all of our white grapes a little early and Viognier is no exception, the idea is that if picked early enough the grapes will maintain their natural acidity which helps give the wine a crisp finish.
