Bursting with aromas of dried strawberries, red fruit and herbs the nose on this rose is very pleasing. The flavors are big and bold, starting off with a sweet component that gives way to a nice crisp finish. This is wine to be enjoyed over the summer on hot days, pair it with cheese plates and seafood.
Each vintage I feel like I have been able to make this rose a little better. I have started harvesting it earlier and giving it a shorter cold soak in order to make a lighter brighter wine. The 2015 vintage was challenging because of all the heat and I was concerned the acid to fruit profile might have a hard time developing in the Barbera but it turned out to work wonderfully. The grapes were hand harvested and cold soaked for around 8 hours before being whole cluster pressed. After a cold settling I racked the wine and started its fermentation. The fermentation took about 30 days at a temperture of 56 degrees, this cool ferment helps maintain the bright fruit aromas. After fermentation the wine was racked, filtered and bottled.
