Tasting Notes
A bright fragrance of apricot, honey and baking spices. The favors are dried apricot, honey, jam and a rich creamy note. The viscosity is high, giving the wine a full-bodied richness. Drinks nicely on its own or over grilled peaches or pound cake.
Winemaker Notes
Dessert wines are interesting to make. Coyote Canyon has been making an ice style wine for years and I am excited to continue the tradition. We hand pick our Viognier and Riesling into small lugs and then put them into cold storage until the grapes are completely frozen. The pressing process is unique. When we put the frozen grapes into our press we only get a fraction of the yield. The juice that comes out is super sweet and thick. The fermentation takes a little longer than a normal fermentation but the results are magic.
This vintage has the aromas I like. The bright apricot and golden color are our trademark style. I hope you enjoy drinking this wine as it takes a lot of timing and effort to create.
