Tasting Notes
This is a dark red wine that almost appears black. Amazing aromas of red and black fruits, sweet cherry, mild earth and oak tones. The flavor profile starts with Bing cherries, dark chocolate and oak. It just keeps going. Richness and structure combine to give depth and length to an amazing Cabernet. The finish is long and lingering with tannin notes and leather. True to the site and the Horse Heaven Hills the tannins have a unique dusty quality to them that adds complexity to the wine. This should age nicely for years to come.

2014 Vineyard Review Vineyard Source: Coyote Canyon Vineyard AVA: Horse Heaven Hills Grower Degree Days: 3164 2014 was a hot vintage in Eastern Washington. Coyote Canyon vineyard had an early spring that led to early bud break. The Summer was hot but consistent, the temperature didn’t get into the triple digits often and grapes were able to ripen at a nice pace. Fall was very generous to the grapes, it cooled off a little and allowed us to pick things in a timely manner. In all honesty, I probably could have either picked a little earlier on these varietals or been more generous with my water-backs during fermentation. I am pleased with the final wine but with a slightly lower alcohol the wine would be softer and more approachable. All our grapes are handpicked and fermented separately so each varietal gets a chance to shine. After fermentation, the wine is aged in oak barrels for 18-22 months. Blends are made after 12 months so the wine can fully integrate before bottling.
Winemaker Notes
Cabernet Sauvignon from the Horse Heaven Hills is one of the most sought-after varietals in Washington State. This is Coyote Canyon at its best. We sourced from 2 blocks on the vineyard, one planted in 2003 and the other in 2014. The blend shows a combination of youth and maturity. Fermenting the blocks separately to allow each lot to express itself and then blending the two together. We have been growing Cabernet Sauvignon since 1995 and our vines are starting to show extra complexity. A touch of Merlot was added to the final blend.
