Tasting Notes
Perfume notes of sage and pepper mix with red fruit aromas when you first smell this wine. The wine needs a little decanting to fully open up and release some of its savory notes. Rich raspberry and dried cherry combined with an oak aroma are noticeable. The flavors are a combination of dark chocolate and earth. The finish is long and lingering. Tannins and acid combine to make for a rich complex wine.
Winemaker Notes
One of my favorite wines to blend is the Bozak. This wine is a Bordeaux style red blend using Cabernet Sauvignon as the base. Cabernet is a grape that has nice tannin and usually a good long finish. I blended in the Malbec to add a little color and an earthy perfume aroma. The Mourvedre adds some acidity and a pepper component that complements the earthy quality of the Cabernet. The Petite Verdot added some mouth feel to the wine and bumped up the intensity a little. This is a wine made to age, it was in French Oak barrels for 22 months, 35% new oak.
